Why Tbilisi Is One of My Favorite Cities in the World (And Why the Chaos Is the Point)
Some cities make immediate sense. Streets run in clean lines. Signs are consistent. Bridges feel like they lead exactly where they should. Everything is designed to be understood quickly.
And then there’s Tbilisi.
Georgia’s capital is riotous, contradictory, and proudly unpolished—and that’s exactly why it’s unforgettable. It’s the kind of place where the “rules” of a city don’t always apply: locals still refer to old Soviet-era street names you won’t find on modern maps, wine might be sold in repurposed plastic bottles from an underpass, and in parts of the historic old town (Kala), the electricity can still blink out at the most random moment.
Instead of ruining the experience, it somehow completes it. Because Tbilisi isn’t trying to be neat. It’s trying to be real.
A City That Rewards Curiosity (Not Perfect Planning)
Tbilisi is at its best when you stop trying to control it.
Step into an unmarked courtyard near the Armenian Norashen Church, and you might find pomegranate trees bending under ripe fruit, stray cats napping in the shade, and a bohemian artist’s studio tucked behind a crooked staircase. Someone may offer you homemade chacha—strong, unapologetic, and impossible to refuse without offending your host (and honestly, you shouldn’t want to).
That’s Tbilisi in a sentence: you enter expecting one thing, and leave with a story.
The Best Food Isn’t Always Above Ground
One of my favorite Tbilisi moments is so simple it feels like a secret.
Slip into the basement of the old red-brick seminary across from Sioni Cathedral and you’ll find some of the best bread in the city—fresh dough slapped against the scorching walls of a round tone oven, pulled out blistered and fragrant by an elderly woman in a kerchief. It’s cheap, humble, and better than most “famous” bakeries.
Tbilisi doesn’t show off. It just delivers.
Sololaki and the “Hidden Apartment Café” Vibe
If Tbilisi has an aesthetic, it’s retro collage.
In neighborhoods like Sololaki—fin de siècle stairwells, peeling paint, ornate balconies—you can climb a slanting set of townhouse stairs and end up in a speakeasy-style apartment café where tables hide behind vines on wrought-iron terraces. On the right day, you might even stumble into an afternoon tango milonga under decorative parasols.
This city is full of places that feel like they weren’t meant to be found—until you find them.
Dry Bridge: Where Tbilisi Sells Its Memory
Cross the Dry Bridge and you’ll reach one of the best windows into the city’s soul: the flea market.
You can bargain with bearded ex-professors for wooden icons, Soviet gas masks, old postcards, Turkish tea glasses, enamel jewelry, and objects that are both beautiful and strange. Come back more than once and vendors remember you—your face, your taste, even who you bought gifts for.
In Tbilisi, commerce is personal. Everything comes with conversation.
“East Meets West” Is True—But It’s Not the Whole Story
Yes, the cliché is that Tbilisi is where East meets West: a Silk Road crossroads shaped by Arab, Ottoman, Mongol, Persian, and Russian empires. In the old town, where rugs hang from weathered wooden balconies and Georgian Orthodox priests weave through tourists on narrow cobblestone streets, it’s easy to believe the fantasy.
But Tbilisi is more complicated—and more intoxicating—than that.
Here, “East” and “West” feel almost meaningless. The same fortress overlooking the old town has been used by conquerors and rebels alike. The skyline shifts from ancient stone to smoky Soviet tower blocks. Beyond it all, the Caucasus rises like a reminder that geography always wins.
One Walk, Three Worlds
Near the sulfur bathhouses—often staffed historically by Muslim Azeris rather than ethnic Georgians—you might find a half-hidden chaikhana serving baklava on carpeted banquettes beside an open fire.
Five minutes later, along the Kura River, you can be sitting in a French brasserie popular with expats and well-heeled locals, sipping café au lait served in an oversized bowl.
And somewhere in between, there’s a restaurant leaning fully into Soviet kitsch with a wink, as if the city is saying: Yes, we remember. No, we’re not ashamed. And also—want another drink?
Hospitality That Turns Into a Monologue (In the Best Way)
Not everyone is playful about the past. But almost everyone is expressive about what they love.
Shopping at the bazroba (bazaar) or eating caraway-spiced khinkali in a wood-paneled tavern, you’re likely to get pulled into someone’s passionate speech—half Georgian, half Russian, sprinkled with English, and heavily supported by hand gestures—about mountains, faith, Mother Georgia, hospitality, or the beauty of a stranger at the next table.
In Tbilisi, opinions aren’t small. Neither are feelings.
The New Tbilisi: Creative, Confident, and Still Rooted
Part of what makes the city so exciting right now is how confidently it blends tradition and reinvention.
Hidden bars double as vintage ateliers, serving cocktails next to tarragon lemonade and thick, syrupy Lagidze-style sodas. Iconic spots embrace mismatched tablecloths, crumbling flea-market décor, and 19th-century lampshades like it’s a curated museum of charming imperfection.
And then there are the new-wave restaurants pushing Georgian cuisine forward—playing with classics, swapping ingredients, modernizing techniques—without losing the identity that makes the food feel like home.
Final Thought: Even the Blackouts Feel Like a Ritual
Sure, the power might go out sometimes.
But in Tbilisi, people light candles, shrug like it’s nothing, and pour you another drink. The city doesn’t apologize for being complicated. It invites you to relax into it.
That’s why Tbilisi is one of my favorite cities in the world: it’s chaotic, layered, warm, and wildly original—and it never tries to be anything other than itself.
